Fruit+Nuts+Biscuit=SCONE

Prep it:
3C flour
2/3C sugar
1T baking powder
1/2t baking soda
12T (1.5 sticks)butter, cool
1C pecans, rough chop
1/2C chopped dry fruit (ginger, apricots, raisins)
1C buttermilk
1t vanilla
3/4t salt

Make it:
-preheat oven to 425deg
-line large baking sheet with parchment
-mix flour, sugar, baking powder &soda, salt
-add butter, cut in
-toss in pecan and fruit
-mix buttermilk &vanilla
-add wet to dry slowly, stir gently to combine
-knead lightly on floured surface
-divide into two chunks, make into 6"discs and cut into pie wedges
-transfer to sheet, 1/2" apart
-brush with milk and sugar heavily
-bake 20 mins until golden and set in center

buttermilk cheat:  mix 1T white vinegar and 1C whole milk, allow to sit for 5mins

  2. Ok, I don't typically like scones too much, but those like fantastic. Perhaps with a nice cup of Irish coffee?
